Bomba Fusion

A quick lunch option near our workplace are the two food trucks that are parked near Occidental Square Park. There are different food trucks that park, and they rotate everyday of the week. We usually get a heads up around 11 on what trucks are parked that day. I have been trying to eat Korean cuisine from the time I landed here in Seattle, was happy to know that Bomba Fusion, a Mexican Korean fusion food truck parked today. Took a short walk to this place, ordered a chicken Bibimbaap, my all time favourite Korean comfort in a bowl. The meat was slight sweet & spicy, nicely flavours & seasoned, so were the veggies, & I opted for the bowl with rice which was perfect with the meat & veggies. Authentic Korean flavours, I did not find much Mexican Fusion, maybe in the meat sauce, but loved this place, & was too tempted to savour another bowl, saved my craving for another day.

I was lucky enough to catch this truck for lunch at work. I was their first customer of the day, and decided to challenge them by ordering the bibimbap trio with double of each meat- spicy pork, spicy chicken, and bulgogi. The meat was definitely nearly too much- which is a rare thing to find on a bibimbap- usually one finds a small amount of meat and mostly vegetables. The vegetables in this were at least bean sprouts, spinach, carrots, and maybe radish. All extremely delicious and worth what I paid- not to mention i got to try their delicious homemade gochujang. Delicious apple undertones and sesame. YUM.

I tried the bibimbap tacos here today. I'm a big taco fan (especially Korean fusion tacos) so I was really excited. Well, I took one bite and could barely keep that bite down without spitting it out. Absolutely terrible. It was cold, the meat was cheap, the veggies were flavorless, the two tortillas (the only thing they got right was tortilla amount so bravo) were uncooked and tasted bland. I would highly recommend avoiding this truck.
