In Singapore, Hainanese Chicken Rice is easily found anywhere, everywhere. But to find good ones, is often tough, sometimes inaccessible. I chanced upon this at the revamped Seng Huat Eating House, 492 North Bridge Road, Singapore 188737. Just opposite Bugis Junction Taxi Stand, adjacent to Liang Seah Street. The chicken is just the way it should be. Meat is juicy tender, shreds effortlessly, most importantly... doesnt flake. Rice is fragrant & not greasy, soup is mild & tasty, not salty. The chili is balanced, not too citrus, not too acidic, not too spicy. Ginger is ground almost to a paste like texture.
