The Red Ember

I have traveled across North America for food destination vacations, it's great! Just had a bad food experience here in my home town. I was served a soggy pizza. Like wet soggy. It tastes like raw dough. So it's easy to tell the oven temp isn't being well regulated and it's too hot. The cheese is browning but the dough isn't cooked thought, it's translucent. This is poor cooking by someone who doesn't understand baking and is fooled by the Maillard reaction happening on the top. I returned the pizza, but I'm not the kind of person who asks for a refund so I just left it with them after I mentioned the issue.I'm good with just not coming back.

We went to Red Ember Common on a summer weekday in 2018 and ordered one of their pizzas with pork sausage, onion and fontina cheese. The tomato sauce is San Marzano tomato-based, which is pretty high quality which I found impressive. The toppings were great and the crust was good – chewy, a tad undercooked, but otherwise ok. The restaurant had a number of in-house sodas which we did not try, but looked really good.
