I've never once in the past 4 months seen them cut the meat directly from the "kebab", instead they always have a pile of already cut meat laying below it. I don't understand why - what's the point of having a kebab if the meat will be laying around already cut for hours and become cold and dry? I wish it would taste more like the chicken kebab street food carts you see in some places. Not sure what the difference is, but theirs is usually more yummy...
