Chanterelle Restaurant At Pronghorn Club

Pronghorn’s Clubhouse Cascada restaurant is must try and far exceeded our expectations ~ it is a signature dining experience! The ambience of the architecture in the lobby is modern wood furnishings accompanied by soft accents featuring the natural tones of the high desert. The service was impeccable and the restaurant Manager (Baltazar ) was ever so entertaining (he said he was moving interstate) - we remembered him as the long time owner of former Baltazar’s Restaurant on the westside of Bend that is now closed (unfortunately). Baltazar will be missed, however, our sumptuous meals at Cascada were first class in quality and the variety of fresh produce was incredibly delicious and full of flavor ~ our compliments to the Chef! We enjoyed handmade gnocchi (rare to find!) that were soft pillows of deliciousness, a fresh Wedge salad, homemade soup with farm-to-table ingredients, and the best steaks we’ve had the pleasure of eating as it was top quality prime beef that was cooked to perfection. They serve complimentary fresh baked focaccia bread that is divine when dipped in olive oil/balsamic. The attention to detail with the quality of the finest/freshest ingredients included in every dish is outstanding. The creme brûlée is so divine that we had it 2 x nights in a row! If you’re staying in the Bend/Redmond area, it’s worth the 20min drive to enjoy the ambience of the dining setting and superb meals the are worth every penny. We also saw a group having fun celebrating a pre-Christmas get together (Dec 2021) as it was a perfect location for such a gathering. Cascada is decorated in the most gorgeous high desert design and worth adding to your bucket list, not only for special occasions ~ for any occasion! The setting is spectacular and particularly enjoyable if you sit outside on the patio and enjoy the views.
