We were concerned that it wasn't going to be as good as a typical restaurant because the food is prepared right in front of you from a buffet style countertop. The ingredients used were good though, and the food was very comparable to other restaurants. The freshly made roll was especially nice. The amount of customization was nice too, including one of those soft drink stations with multiple flavored syrups. The problems we had were that it's served in disposable dishes, which probably makes sense from a business perspective, but makes the food look cheap. The other problem is that they were very understaffed when we went on a Saturday night at dinner time. The staff there were doing the best they could, but a long line formed and trash piled up out of trash can.

Honestly I was shocked to have such a tasty and delicious pho broth in a fast food setting. Really.
I have had a lot of Pho and I can tell you most do not have good broth.

It's like Chipotle but for Vietnamese food. I got a pork noodle bowl and it was DIVINE! For sauces I'd definitely recommend the Vietnamese vinaigrette and the peanut sauce.

The pho is pretty good here. It is clean and no complicated stuff just brisket and rare steak. I've had the fresh rolls here too and they are good. Very quick and easy just like the name it's simple.

SimpleViet is the newest addition to this mall that also houses Nick the Greek and long time Ethiopian food favorite Walia. Simply Viet is clean and bright and it’s best to think of it as Chipotle meets Pho, but forget about hole-in-the-wall spots with questionable cleanliness, Simply Viet is bright and spacious.
Menu options are straightforward with pho, spring rolls, and Banh mi (sandwiches) anchoring the menu. For Chipotle fans, you can customize as you like with your choice of base, protein, and sauces, but even for novices, several pre-selected options are available.
Plentiful tables are available but drinks and disposable plate ware are all used so it’s perfect for those on the go.
I ordered the signature rare steak pho and it’s both a generous portion with solid quality brisket and rare steak on the side. The broth is hot and flavorful and while the noodles were a bit clumped that improved with time in the hot broth.
Overall, SimpleViet was a good stop and a great option for a quick and simple meal in the area, especially to-go. The area is particularly barren of Vietnamese options so I’m glad to have Simply Viet.
SimpleViet accepts credit cards including Amex. Tip: order the SoTasty Pho and get the rare steak on the side.

Fresh, tasty food. Doesn't have an authentic taste but more of a modern twist. Did not care for peanut sauce. Fast service good for Vietnamese fast food.

The rolls are very filling and a good deal. I find that two rolls is filling enough for lunch portions. I prefer the beef and the tofu for fillings, with the tamarind and the garlic sauce. Discount after 230 PM. Also their credit card system is rewards enabled.

Modern take on the pho restaurant. Quality of food is good, with fresh ingredients and generous portions. Easy to order specially for folks less familiar with the speed in speed out nature of traditional places. Clean bright and airy. Nice dining environment. However something is missing in the soup and sauces. Just not as complex and complete.

With the whole deli style, we make it in your face, business models made popular by chains like subway and Chipotle. It wasn't long until someone applied that model to Viet food. Now, Vietnamese food has so many dishes. This is mainly the spring roll, noodle/rice bowl, and pho that they serve here. I come here for lunch. Now mind you, there isn't much for Vietnamese food around the area. Quality is found towards East San Jose but they're close and convenient for me. The price is fair. The food taste good. The sauces are not to my taste. That just comes down to certain regions of Vietnam. There are slight flavor differences. Nonetheless, the main course typically don't require much of it anyhow. Glad these guys are here close to my home and office. When I need a quick Viet fix, these guys will do.
